Two items jump immediately to mind and these are Pepper Roti and Samosas.
Pepper roti has been largely confined to being made on the cooking night of a Hindu Wedding (the night before the actual wedding day). The expansion of pepper roti to being considered a street food started gaining popularity with each passing year an ever growing presence in what is called the divali nagar in trinidad, from here street sellers started selling them at the side of the road from styrotex coolers.
Pepper roti is a white flour roti stuffed with spicy hot scotch bonnet (congo) peppers, more peppers mean more heat, cheese, carrots potato and garlic to name but a few ingredients.

The other contender is the Samosa a triangular pastry filled with seasoned potatoes. The samosa has started to gain popularity along with other foods from the asian continent as the influx of indian cooks from india and nepal are increasing in number in Trinidad. As this popularity grows i'm it won't be that long again before it becomes regular fare in Trinidad and Tobago.
