The name cow heel soup does not bring forward thoughts of a culinary delight but, as the old saying goes don't knock it until you try it. Cow heel soup is a favorite after fete, river lime or a general evening type food. As is usual in Trinidad every cook has their own recipe and secret ingredient. But generally cow heel soup is made from various vegetables and ground provisions, with or without dumplings and of course the main ingredient cow heel. By now you would have realized that is no joke we actually going and eat cow heel in a soup, and how do we acquire the cow heel ? Well we just head to the nearest supermarket and there it is in the freezer ( can also be acquired from the neighborhood butcher/meat shop fresh).
