Baiganee

The Baiganee created from slices of Melongene aka Eggplant aka locally as Baigan hence the name Baiganee, is usually sold by all year round roadside vendors and hot on the spot vans (food trucks/vans) where they are fired and sold to you while you wait. The Melongen/Baigan is sliced into 1/2" circular pieces dipped in a batter and fried. The crunchier the batter the better it tastes in my opinion. The Baiganee is served with or without channa (chick Peas)  with the various chutneys/sauces ( mango, tamarind, pepper) according to your preference and taste. Because the Baiganee is deep fried it tends to be a bit oily so if you watching the cholesterol this may not be for you.

The above two images show the baiganee after its been fried and then after condiments (mango sauce, shandon beni sauce and pepper have been added.
Generally baiganee is the same flavour all over but there's this place near lime head road in chase village that has a delicious baiganee.
